New at the Swinery: Fermin iberico de bellota pork is here! Iberico pigs feast primarily on acorns and wild herbs, an entirely natural diet that results in a unique fat storing ability throughout the muscle to give this meat a fabulous marbling and incomparable taste and texture. We have both dry cured and raw cuts available, probably best to call in advance if you’d like a particular cut or quantity so we can save it for you.
